Three separate things
The vehicle. Yours, rented in your name, on whatever terms you agreed with the rental company. Read what you actually took, because the cover offered at the counter varies enormously and the default is often less than people assume. That is between you and them and it is worth understanding before the day.
Your property, and the crew working in it. Damage caused in the course of the work, and injury on your premises. That is what general liability is for and it is the thing to verify before letting anybody in. Ask to see it.
The goods themselves in transit. This is where labor-only differs most from a full move. Once your belongings are on a truck you rented and are driving, the arrangement is not the same as when a company transports them in its own vehicle. Ask any labor-only provider directly what applies to the items after loading, and get a clear answer rather than a reassurance.
What follows practically
Check your own homeowner or renter policy, which sometimes covers belongings during a move and sometimes does not. Your insurer can settle it in a five minute call, and on a labor-only move that call is worth more than on any other kind.
Photograph anything valuable before it is loaded, with condition and serial numbers.
Keep documents, jewellery, medication and anything irreplaceable in your own vehicle, which is excluded from cover essentially everywhere in any case.
Consider what you are asking of the arrangement. If a load contains something genuinely valuable and fragile, a full-service move where one company handles and transports it is a different risk profile, and that may be worth the difference.
