Establish the business is real
A verifiable local address rather than a post box. A phone number that a person answers. A business name that matches the paperwork and the vehicle.
Be wary when the company that quotes you and the company on the contract have different names. That is the arrangement most likely to leave you with nobody accountable.
Check the licensing that applies
For a move within Utah, ask whether they are licensed and insured in the state, and ask for the insurance certificate rather than accepting the claim. Any legitimate company produces it without hesitation; buildings and HOAs ask for it constantly.
For an interstate move, the company must be registered with the federal regulator and have a USDOT number you can look up. Do look it up, since it takes a minute and shows you the operating authority and complaint history.
Get the estimate in writing, after a real assessment
A quote given over the phone with no questions about your house is not an estimate; it is a number. Any company that intends to honour a price wants to know what is in the garage.
Written, itemised, with the basis stated: hourly or fixed, what is included, what would change it. If you cannot tell from the paperwork what would make the price go up, ask until you can.

Warning signs
A large deposit demanded up front, particularly by cash, wire or gift card. Blank or partly completed paperwork to be filled in later. Pressure to decide today. A price dramatically below everybody else's, which usually becomes a different price once the load is on the truck.
Ask about the crew
Whether the people arriving are employees or casual labour hired for the day, and whether the company carries workers' compensation. It affects both the quality of the work and who is responsible if somebody is hurt in your house.
Read reviews for the specifics
Ignore the star average. Read the detailed ones, particularly the negative ones, and look at how the company responded. A business that answers a complaint properly tells you more than a page of five-star ratings.
