Approximate value and when it was last assessed. For jewellery, collections and anything appreciating, an old valuation is close to no valuation.
Then talk to your insurer

Ask whether firearms, jewellery or collections are covered at all under your policy, and to what limit. General contents limits for these categories are frequently low and surprise people.
Ask whether items need scheduling individually above a threshold, which is common.
Ask whether they are covered away from the property and in a vehicle, which matters because you will be transporting them yourself during the move.
Ask whether the safe itself, its rating and its anchoring affect your terms. Some insurers require particular standards for certain cover.

Where to keep the record
Not in the safe. That is the one place a record is useless in most loss scenarios.
Somewhere off-site or in cloud storage, and tell somebody you trust where it is.
While the contents are with you
They travel in your own vehicle rather than on any truck, secured and in accordance with the applicable law, which differs by jurisdiction and is not something a moving company should advise on. Documents, cash and jewellery go the same way.
If the move spans more than a day, keep them with you rather than in a hotel room or a parked car, and in summer here do not leave anything of value in a vehicle at all.
