Pack in two tiers
The approach that handles uncertainty well.
Tier one is everything you can live without indefinitely. Off-season clothing, books, decorative items, the garage, storage areas, spare rooms, anything seasonal. Pack all of this as early as you like. If the date slips a month, none of it matters, because you were not going to use any of it.
That is usually the majority of a house by volume, which means you can be substantially packed without being inconvenienced.
Tier two is everything you actually use. Kitchen, bedding, toiletries, clothes, anything weekly. This stays out until the date is genuinely fixed, and it is what a packing crew can do in a day if you want it handled.
The split means a slipping date costs you nothing, and a date that suddenly confirms leaves only the short job outstanding.
Do not seal what you might need
Keep the things that get used during a delayed move findable: tools, cleaning supplies, paperwork, the vacuum, basic kitchen items. If a date moves twice, you will want those.
Number the boxes as you seal them and keep a rough list of what is in each. Ten seconds a box, and if you do need something from tier one during the wait, you look at a list rather than opening eleven boxes.
If there is a gap
Where belongings go into storage between addresses, pack differently. Do not seal upholstery or fabric tightly in plastic, because a unit swings through temperature changes and trapped moisture is what ruins soft furnishings. Keep things off the concrete. Leave an aisle. Label boxes on the side facing it.
The rules that always apply
Fill every box to the top so it does not crush. Small boxes for heavy things, large for light. Plates on edge like records rather than stacked flat. Label by destination room.
